Preheat oven to 180°C/350°F/Gas Mark 4. Line a 20cm round baking tray (or 2lb loaf baking pan).
Mush the bananas in a mixing bowl. Add in the eggs, vanilla, carrots and sunflower oil. [If you are using sugar, you can add it in at this stage]. Whisk it all together using a fork or dedicated whisk.
Now tip in the flour, raisins, cranberries, all spice, nutmeg and mix together. Make sure all the ingredients are well mixed in.
Pour the mixture into the baking tin. Place it in the oven for 40 minutes or until the mixture looks like it has risen well and when you put a knife through the cake it comes out dry.
Leave it out to cool down for around 10 minutes before placing it onto a suitable surface (wire rack is best if you have one).
Enjoy on its own or like we did topped with unsalted cashes and almonds!
