Spinach In Coconut Milk

A classic East African spinach recipe in coconut sauce. Makes the perfect side dish to go alongside pretty much anything !!! We love this dish and definitely a regular on our weekly meal plans.

Spinach in Coconut Sauce
Ingredients
- 260 g Spinach
- ½ Onion finely chopped
- 1 tbsp Paprika
- 1 tbsp Ginger
- 1 cup Coconut milk
- 2 tbsp Butter
- 1 tbsp Chicken stock seasoning
Instructions
- Warm pan on medium- high heat and add olive oil. Add in the onions ,ginger and paprika until onions are a nice translucent colour.
- Add in the spinach , cook on medium-low heat until the leaves shrink . Mix in well with onion mixture .
- Add in the coconut milk and chicken seasoning .
- Leave to simmer for about 2 minutes so that the sauce can thicken nicely which get you that delicious creamy texture too.
- Enjoy!
Notes
Be careful not to overcook the spinach – depending on the spinach type you get some may need longer to cook or less time.
