A classic East African spinach recipe in coconut sauce. Makes the perfect side dish to go alongside pretty much anything !!! We love this dish and definitely a regular on our weekly meal plans.


Spinach In Coconut Milk

Spinach in Coconut Sauce

Ingredients
  

  • 260 g Spinach
  • ½ Onion finely chopped
  • 1 tbsp Paprika
  • 1 tbsp Ginger
  • 1 cup Coconut milk
  • 2 tbsp Butter
  • 1 tbsp Chicken stock seasoning

Instructions
 

  • Warm pan on medium- high heat and add olive oil. Add in the onions ,ginger and paprika until onions are a nice translucent colour.
  • Add in the spinach , cook on medium-low heat until the leaves shrink . Mix in well with onion mixture .
  • Add in the coconut milk and chicken seasoning .
  • Leave to simmer for about 2 minutes so that the sauce can thicken nicely which get you that delicious creamy texture too.
  • Enjoy!

Notes

Be careful not to overcook the spinach – depending on the spinach type you get some may need longer to cook or less time.
