Risotto With Chorizo and Prawns

Chorizo and Prawns Risotto

Ingredients
  

  • Olive oil
  • 1 Onion
  • 100g Mushrooms Closed cup chestnut
  • 1 Pepper
  • 80g Chorizo
  • 1 Clove of garlic Crushed
  • Chive
  • Ground black pepper
  • 1 tbsp Paprika
  • 60 g Parmasan Cheese
  • 1litre Chicken stock seasoning Vegetable stock is also suitable
  • 400g Canned tomatoes Plum
  • 100g Prawns
  • 1/2 Cup Double Cream
  • 500g Risotto Rice

Instructions
 

  • Chop up the chorizo , peppers, mushrooms, onion into small – medium chunks . Now put those aside, get a pan and heat up the chicken stock and tomatoes together.
  • In another pan , ideally medium sized shallow pan add 4 tablespoons of olive oil . Once the oil has heated , add in the onions until they soften slightly , then add in the chorizo, prawns, mushrooms , peppers, paprika and crushed garlic over medium heat for about 7 mins until the chorizo begins to get a little crispy.
  • Add in the risotto rice into the chorizo and prawns mix , ensuring that the rice grains are mixed in well.
  • Grab the other pan with the stock and tomatoes and add to the rice mixture – pour in enough to cover just above the mixture, add in the double cream and about 50g of grated Parmesan cheese .Keep at medium heat for about 5 mins with a lid on , when you see the water evaporate lower the heat to low.
  • Top up with more stock mixture little by little as the water evaporates and keep testing the rice grains if they have softened to your liking. If not, keep adding the stock or more water until the rice is tender with a slight firmness inside , then add a little more stock to maintain the moisture (approx. 1/2 cup).
  • Serve the dish with a small bunch of finely chopped chives, topped with the remaining Parmesan cheese ( grate extra if required) and a little pinch of ground black pepper.
