A good Friday lunch or dinner option to try out is this delicious cod in breadcrumbs with roast potato wedges (or chips) and peas.

Cod In Breadcrumbs Recipe

  • 4 Cod fillet
  • 1 Lemon
  • 2 tbsp All purpose seasoning
  • 2 tbsp Soy Sauce
  • 1 tbsp Minced Ginger
  • 2 Eggs
  • 50 g Plain flour
  • 100 g Breadcrumbs Alternative; Weetabix
  • Ground black Pepper
  • Paprika
  • Olive Oil
  • Tartare Sauce
  • Fresh Chives


  • Place cod into a mixing bowl. Squeeze in ½ the lemon , all purpose seasoning, sprinkle of ground black pepper, ginger , 1 tsp of paprika , soy sauce in the mixing bowl with the cod. Mix in well making sure each cod fillet is coated fully with the marinade.
  • With each cod fillet dip in flour first, then the egg and finally coat with breadcrumbs (press breadcrumbs in as go) . After this , you can let the fillets set in the fridge for about 30 mins to allow the breadcrumbs stay in place .
  • Next, add 2 tbsp of olive oil in a shallow frying pan – heat up on medium heat. Add in two fillets at a time and cook until golden brown – cook each side for at least 3 mins or until your satisfied that it's cooked on the inside.
  • Ready to eat now! Serve with roast potato wedges and peas . Also don't forget to add on a little tartare sauce and top with sprinkles of finely chopped chives .
