There’s nothing quite like having the whole house filled with the sweet smell of baked goods in the morning. That’s why this super easy banana and carrot cake recipe is such a treat. Today we’re going to share with you how to make banana cake without sugar that is still so yummy!

Now, we absolutely love baked treats especially when they can help to switch up the morning routine.

But being mums to young children as well as being conscious of what we feed ourselves, once in a while when we do make treats we try to limit the amount of unnecessary sugar. Or in some instances we simply won’t add any sugar to a baked recipe.


How to make banana cake without sugar

What we’ve found is that you can often still get great pleasure from baked treats without added sugar as you can from those that do have it – you just have to experiment to find what works for you.

What most people enjoy about a moist and aromatic cake or crusty croissant is not so much the sugar but the smell and the textures that come from the baking process itself. So for a while now we’ve been experimenting with different forms of natural sugar that we can use and other ingredients and spices that can still make our baked treats interesting.

For this recipe for example we didn’t use the usually recommended 100g of sugar and instead relied on a combination of the naturally sweet very ripe bananas, carrots, dried raisins and sweetended dried cranberries. The cake didn’t last survive very long in the kitchen so we guess it still hit the mark!

How To Make Banana Cake Without Sugar

Breakfast Banana Cake Recipe

Prep Time 10 mins
Cook Time 40 mins
Course Breakfast, Snack

Ingredients
  

  • 3 Ripe Bananas The riper the better
  • 1 Large Carrot
  • Cup Dried Raisins
  • ¼ Cup Dried Cranberries
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 3 Eggs
  • 1 tsp Nutmeg
  • 1 tsp All Spice
  • 100 g OPTIONAL: Brown Sugar
  • 150 ml Sunflower Oil Vegetable Oil also works
  • 270 g Self-Raising Flour

Instructions
 

  • Preheat oven to 180°C/350°F/Gas Mark 4. Line a 20cm round baking tray (or 2lb loaf baking pan).
  • Mush the bananas in a mixing bowl. Add in the eggs, vanilla, carrots and sunflower oil. [If you are using sugar, you can add it in at this stage]. Whisk it all together using a fork or dedicated whisk.
  • Now tip in the flour, raisins, cranberries, all spice, nutmeg and mix together. Make sure all the ingredients are well mixed in.
  • Pour the mixture into the baking tin. Place it in the oven for 40 minutes or until the mixture looks like it has risen well and when you put a knife through the cake it comes out dry.
  • Leave it out to cool down for around 10 minutes before placing it onto a suitable surface (wire rack is best if you have one).
  • Enjoy on its own or like we did topped with unsalted cashes and almonds!
