Recipe of the day is how to cook beef stew in Red wine. With London Wine Week coming up, we thought it would be nice to have a meal inspired by wine. 

We like to use beef shin when making stews. Beef shin comes from the leg of a cow which means it has quite tough meat based on the location of where it is. Therefore, it has the capacity to really absorb great flavours as well as hold in a stew. 

Whilst we have cooked our stew today in a pot, you can do this in a slow cooker if you need to leave it to cook whilst you’re out and about doing other things.

Our recommendation would be for you to follow the first few steps of frying all the ingredients and at the point you add in the the stock, you can then put it in the slow cooker.

The additional benefit with this meal is that it is a one pot meal which means less washing; result! ☺

So here’s our beef stew which we made with coconut rice and garden peas but it goes equally well with a good mash potato. It’s soo simple but tastes amazing and will certainly give you that comfort food feeling.

How To Cook Beef Stew In Red Wine

BEEF STEW IN RED WINE

Prep Time 10 mins
Cook Time 40 mins
Course Main Course

Ingredients
  

  • 400 g Diced Beef Shin 
  • 2 Shallots
  • Onion Salt Add to suit you taste.
  • 1 tbsp Tomato Purée
  • 1 tbsp Crushed Garlic
  • 1 tsp Italian Herbs
  • 175 ml Red Wine
  • 1 tbsp Olive Oil
  • 200 ml Beef Stock
  • 300 ml Water 

Instructions
 

  • Soak the beef in red wine for a minimum of two hours before cooking. The longer you soak it, the better the taste. I had managed to do a bit of prep so I soaked mine for four hours.
  • Take the beef out of the red wine and leave to the side as you heat some olive oil in a medium-sized pan. Once the oil is hot enough, add the beef into the pan and fry until any residual wetness begins to disappear. 
  • Add your onions into the pan and cook until the onions have wilted. Then add garlic, tomato purée, onion, salt and herbs. Continue to mix and allow the flavours to cook off.
  • Pour your red wine from above (1) back into the pot and allow it to simmer and cook off the alcohol for at least three minutes. Finally pour in your beef stock and water and give it a final mix before lowering the heat and allowing the mixture to cook at a medium heat for 40 minutes. 
  • Serve with your choice of sides.
