Easy Slow Cooked Lamb Shanks

There are many foods we love here at Simple Yummies and deliciously slow cooked lamb definitely ranks as one of our favourites. We love food but we love it even more when its simple to make yet still has awesome flavour. These easy slow cooked lamb shanks really couldn’t be any simpler if we tried and they taste great.
They have such a wonderfully comforting taste to them and after slow cooking for hours they come out soaked in juicy flavours that will have your tummy rumbling well before you tuck in.
Easy Slow Cooked Lamb Shanks
Lamb shank is a cut of meat taken from the lower part of the leg of lamb. They have lots of connective tissues so tend to be quite tough. However, the beauty of slow cooking lamb shanks is that by the time they are done, they can be wonderfully succulent and should easily fall off the bone.
How Long Do You Slow Cook Lamb Shanks?
As lamb shanks start off quite tough you can slow cook them for a number of hours and still not compromise the meat. For this recipe we slow cooked the lamb shanks for 4 hours on high heat on our Crockpot slow cooker . If we wanted to we could have also gone for 8 hours on low heat.
The great thing with slow cooking lamb shanks is that you can experiment with the length of time and tenderness you want without worrying too much.
If you are short on time or you forget to put it in early enough, you might be able to get away with a 2 hours on high heat in the slow cooker followed by another 1.5 – 2 hours in the oven. Though the meat would not be as tender as going for around 4 hours in the slow cooker on high heat, it should still be pretty good.
How To Make Slow Cooked Lamb Shanks
Let’s take a slow look at how to make slow cooked lamb shanks. For this recipe we combine both a slow cooker and the oven to make the lamb shanks as tender as possible whilst giving them that classic roasted meat feel.

Easy Slow Cooked Lamb Shanks
Equipment
- Slow Cooker
Ingredients
- 2 Lamb Shanks
- 1/2 Fresh Lemon
- 1 Tablespoon Thyme
- 1 Tablespoon Oregano
- 1 Tablespoon Ground Black Pepper
- 1 Tablespoon Ground Paprika
- 1 Tablespoon Season All
- Thumb of Ground Ginger
- 8 Chunks of pineapple
- 1/2 Red Pepper, cut into small chunks
- 2 Tablespoon Soy Sauce
Instructions
- Rinse lamb in cold water and place inside slow cooker pot. Squeeze half of the fresh lemon over the meat.
- Add the thyme, oregano, ground black pepper, paprika, season all and ginger.
- Add half a cup of water to the pot.
- Place the lid of the slow cooker and if safe to do so, take a hold of it and shake it so that the lamb and the seasoning mix in together. Note if the slow cooker pot is too heavy then you can do the mixing in a separate plastic bowl or something similar and then transfer it to the clow cooker.
- Place in the slow cooker on high heat for 4 hours.
- Preheat your oven to 160°C (320 °F). Once the slow cooker cycle is done, move the lamb to a suitable oven dish. Do not discard the excess juices from the slow cooker.
- Add the red peppers, pineapple and soy sauce.
- Spread the juices from the slow cooker over the lamb and vegetables.
- Place in the oven for around 20 – 30 minutes (or until it becomes slightly brown and crispy) before turning it over. After turning it over, spoon some of the juices over the meat and vegetables again to keep them moist.
- Remove from the oven after another 20 – 30 minutes (or until it becomes slightly brown and crispy). Enjoy!
