Easy Salmon Marinade

We love our salmon…oh yes! So here we go again with another salmon recipe. This time a salmon marinade in coconut stew, which is one of our favourite recipes we learnt from our Mother.
Easy Salmon Marinade

Salmon in Coconut Stew Recipe
Ingredients
Salmon Marinade:
- 4 Salmon Fillets Skinless
- ½ Lemon
- ½ tbsp Minced Ginger
- 1½ tsp All Purpose Seasoning
- 1 tsp Paprika
- 1 tbsp Olive Oil
Sauce:
- ½ Courgette
- ½ Bell Pepper
- ¾ Chopped Tomatoes Canned
- 1 tbsp Chicken Stock Seasoning
- 5 tbsp Coconut Powder Alternatively; Coconut Milk
- 300 ml Hot Water
Extras:
- Grated Parmesan Cheese Optional
Instructions
- Preheat the oven to 180°C.
- Place the salmon fillets in a mixing bowl and add the lemon, ginger, all purpose seasoning and paprika. Mix in well so that each fillet piece is covered with the marinade.
- Place the marinated salmon in a oven dish and place in the preheated oven .
- In a deep frying pan add in about 1 tbsp of olive oil on medium-high heat . Add in the chopped canned tomatoes, mix in well and leave simmer for 30 secs. Then add in the bell peppers, courgettes and mix in with the tomatoes in the pan.
- In another pan add in the hot water , coconut powder or milk and chicken stock seasoning. Mix them all together until all the lumpy bits are dissolved .
- Then add this mixture to the mixture in the deep frying pan . Mix and leave to simmer for about 2 minutes until the sauce thickens slightly, then transfer the sauce into the salmon dish in the oven. Leave to cook for 25 minutes until the salmon starts to brown at the top.
- Serve with potatoes or ugali like we did and vegetables! Finish of with a little grated Parmesan cheese on top of the salmon (optional).Enjoy!
Notes
Add in additional drops of water if the sauce dries out too much after you have removed the salmon from the oven.
